In the dough of this pie I add sparkling lemonade. The lemonade bubbles work in the dough as a baking powder, so pie will have very soft air texture. Choose for dough a lemonade without strong taste (for example Cola or Fanta will not be good). Instead of kiwi, you can add in pie pieces of peach, apricot, pineapple or pear. Very often, I use canned fruits for this pie but pour out syrup.
- 3 eggs
- 1 cup of sugar
- 2 cups of flour
- 1 teaspoon baking powder
- 100 ml lemonade
- 150 ml olive oil
- 4 kiwi
- 1 pinch of salt
- 1Using an electric mixer, beat eggs and sugar together until light and fluffy. Add butter and lemonade, mix with whisk.
- 2Sift flour with baking powder and salt. Put the flour mixture into the bowl with wet ingredients and stir until well combined. Dough should be dense and smooth. Put the dough to the form and smooth it out by spatula.
- 3Peel kiwi and chop it to lobules. Put pieces of kiwi on the dough.
- 4Preheat the oven to 350 F / 180 C. Put form to oven and bake for 25-30 minutes. Cool the pie and serve it.
